In addition to wheat, rye is the only other cereal whose flour is breadmaking. This product consists only of whole rye flour. It contains no wheat or yeast. It is therefore ideal for people allergic to wheat. We end up appreciating its very pronounced taste and its very dense texture. Try grilled with maple syrup or with cream cheese and smoked salmon! Rye (secale cereale) is also an ancestral grain. It is rich in fiber, antioxidants and minerals (especially manganese and selenium). Its effectiveness is shown to prevent cancer, heart disease, type 2 diabetes and intestinal diseases. Rye contains gluten but not gliadins, the allergen portion of wheat gluten. In addition, the gluten content is much lower; this explains the lack of elasticity of the slice of bread and its density. Many of our slightly gluten intolerant customers have adopted this bread as an acceptable substitute.
