Description
Buckwheat ( Fagopyrum esculentum ) is not a grass and is gluten-free. Therefore, its pure flour is not bread-making. It must be mixed with wheat or rye flour. In this case, it is mixed with spelled flour. This is why it is low in FODMAPs. Buckwheat has a rich nutty flavor. However, it is consumed more often for its dietary properties. Its proteins contain all the essential amino acids. It is a highly nutritious grain that is rich in soluble fiber, antioxidant compounds and minerals (especially copper, magnesium, and manganese).

Water, unbleached spelt wheat flour, stone-ground whole spelt wheat flour, spelt sourdough leaven (stone-ground spelled whole wheat flour, water), buckwheat flour, sea salt, sunflower oil, ascorbic acid (vitamin C).
