Navy beans are sometimes called pea-beans and are the second most popular dry edible bean in the United States. They are similar to great northern beans but are a bit smaller. Navy beans make delicious baked beans and are good for soups.
Instructions: Soak in cold water for 8 hours or bring water and beans to boil for 2 minutes. Cover and set aside to soak for 1 hour. Bring to boil for 10 minutes in 3 parts water to one part beans and simmer covered for 1½ to 2 hours.
Shelf life: 2-3 years. Best if consumed within the 1st year.
