Description
This is a fine white flour made from potatoes that have been cooked, dried and ground, and has a light potato flavour which is undetectable when used in recipes. It is an excellent thickener for sauces. It's one of the few alternative flours that keeps very well provided it is stored in an airtight jar, and somewhere cool and dark.
Directions: To thicken one cup of liquid you will need 2 ¼ tsp potato starch. Whisk the starch with 2 tbsp of water and let it stand while you bring the liquid you are thickening to a boil. Re-whisk the starch before adding it to the boiling liquid. It will produce a clear sauce.
