Description
This is a pure emulsifier and thickener is very popular among people with gluten allergies. An advantage of guar gum is that it thickens without the application of heat. It is derived from the ground endosperm of the guar plant. The guar plant is mainly grown in India and Pakistan. The seeds are extracted from the pod of the plant and then ground into guar gum.
Substitutes: xanthan gum (Substitute an equal amount of xanthan gum for guar gum. Xanthan gum is more expensive, but interchangeable with guar gum. It has 5-8x the thickening power of starch.
Shelf life: 6-9 months.
