Description
French lentils are a variety of green lentils. They are a slightly darker hue and about one third the size. They are special because they hold their shape extremely well, rather than turning to mush as other lentils do in soups or salads. Their flavour is also slightly different than other types; it's a bit nutty and peppery, with a slight mineral-like, earthy flavour.
Instructions: Rinse and drain 1 cup of dry beans. Add lentils to 3 cups boiling water, and simmer covered for 20-30 minutes.
